Sweet Potato Toast Three Ways
Ingredients
- 1/2 large sweet potato
- spinach
- 1 egg
- everything but the bagel seasoning
- peanut butter
- banana
- cinnamon
- 1/2 avocado
Preparation
Slice a large sweet potato into toast-shaped pieces, aiming for about 5-6 slices or 3 slices per serving.
Microwave the sweet potato if it is too hard to slice for easier handling.
Preheat the oven to broil.
Place the sweet potato slices on a baking sheet and bake on the bottom shelf for 12-15 minutes until soft, depending on thickness.
Prepare toppings as needed: sauté spinach, boil an egg, and have other items ready.
Top the baked sweet potato toasts with combinations such as sautéed spinach with boiled egg and everything but the bagel seasoning, peanut butter with banana and cinnamon, or avocado.
Sweet potatoes can be made a day or two in advance and topped fresh when ready to eat for convenience.
