Sweet Potato Toast with Savory and Sweet Toppings
Ingredients
- 1 sweet potato
- 1/2 avocado
- 1 egg
- ghee
- everything but the bagel seasoning
- peanut butter
- honey
Preparation
Slice the sweet potato into toast-sized pieces.
Broil at 500°F for 10-12 minutes on the bottom shelf.
Mash half of the avocado.
Fry the egg in ghee.
For the savory version, top the toast with mashed avocado, fried egg, and everything but the bagel seasoning.
For the sweet version, spread peanut butter on the toast and add honey.
To create a honey design, pour honey in lines and drag a toothpick back and forth in opposite directions.
