Sweet and Savory Paleo Waffles

Ingredients

  • 1 cup birchbenders paleo pancake mix
  • 1 cup unsweetened almond milk
  • 1 tablespoon ancient nutrition vanilla collagen
  • sprinkle of cinnamon
  • coconut oil or butter
  • bananas
  • peanut butter
  • 1 egg
  • 1/2 avocado
  • everything but the bagel seasoning

Preparation

  1. Mix 1 cup paleo pancake mix, 1 cup unsweetened almond milk, 1 tablespoon vanilla collagen, and a sprinkle of cinnamon to make the batter.

  2. Spray the waffle maker and cook the waffles until done.

  3. For caramelized bananas: Add coconut oil to a skillet, slice the banana, sprinkle with cinnamon, and cook for 30 seconds on each side.

  4. Fry an egg in ghee.

  5. Mash half an avocado and season with everything but the bagel seasoning.

  6. Assemble the dish by topping the waffles with caramelized banana, drizzled peanut butter, fried egg, and mashed avocado.

  7. Note: Caramelized bananas are easy to make and add great flavor; store extra waffles in the freezer for later use.
