Sweet and Savory Paleo Pancake Tacos

Ingredients

  • 3/4 cup birchbenders paleo pancake mix
  • 3/4 cup unsweetened almond milk
  • cinnamon
  • blueberries
  • 1/4 cup fage yogurt
  • 1 egg
  • spinach
  • cashew butter
  • 1/4 banana

Preparation

  1. Mix 3/4 cup paleo pancake mix with 3/4 cup unsweetened almond milk and cinnamon to make batter.

  2. Cook the batter to make 3 small pancakes.

  3. Warm the blueberries.

  4. Fry one egg.

  5. Sauté the spinach.

  6. Assemble each pancake by adding warmed blueberries, 1/4 cup yogurt, fried egg, sautéed spinach, and a spoonful of cashew butter with 1/4 banana.
