Paleo Sweet Potato Waffle Sandwich

Ingredients

  • 1 cup mashed sweet potato (cooked, about 1 medium sweet potato)
  • 1 egg
  • 1 scoop of furtherfood collagen
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened almond milk
  • 1 tsp cinnamon

Toppings

  • spinach
  • 1 egg
  • avocado

Preparation

  1. Cook the sweet potato by boiling or microwaving until soft.

  2. Mash the cooked sweet potato to obtain about 1 cup.

  3. In a bowl, combine the mashed sweet potato, 1 egg, 1 scoop of collagen, 2 tbsp coconut flour, 1/4 cup unsweetened almond milk, and 1 tsp cinnamon to form the batter.

  4. Cook the batter in a waffle maker for 10 minutes, ignoring the green light.

  5. Sauté the spinach in a pan with a little oil until wilted.

  6. Fry the egg to your preferred doneness.

  7. Slice the avocado.

  8. Assemble the sandwich by topping the waffle with the sautéed spinach, fried egg, and sliced avocado.
