Sweet and Savory Paleo Sweet Potato Waffles
Ingredients
- 1 cup mashed sweet potato (about 1 medium sweet potato baked)
- 1 egg
- 2 tbsp coconut flour
- 1 tsp cinnamon
- 1/2 scoop collagen
- 1/4 cup unsweetened almond milk
Preparation
Mix all ingredients together well.
Spray a waffle iron with non-stick spray.
Cook in the waffle iron for 10 minutes on medium heat, ignoring the timer on the waffle maker.
Top with savory options such as egg, avocado, and spinach, or sweet options like chocolate chips and peanut butter.
For a fully paleo version, substitute peanut butter with another nut butter.
