Sweet Potato Waffles with Dips
Ingredients
- 1 egg
- 1 cup mashed sweet potato
- 2 tablespoons coconut flour
- 1/4 cup unsweetened almond milk
- 1 teaspoon cinnamon
- 1 teaspoon coconut sugar (optional)
- 1 tablespoon collagen (optional)
Preparation
In a bowl, whisk 1 egg then add the other ingredients to form the batter.
Grease the waffle iron and pour in the batter.
Cook in the waffle maker for 10 minutes, ignoring the automatic light.
Cut the waffles into sticks.
Serve with mashed raspberries, yogurt, frozen blueberries, and maple syrup. Warm the fruit to enhance the dip if desired.
