Four-Ingredient Sweet Potato Waffles
Ingredients
- 1 egg
- 1 cup mashed baked peeled sweet potato
- 2 tablespoons coconut flour
- 1/4 cup unsweetened almond milk
- a pinch of salt
Optional additions
- spices such as cinnamon or garlic to taste
Preparation
Bake the sweet potato until soft, peel and mash it to measure 1 cup
Whisk 1 egg.
Add the mashed sweet potato, coconut flour, almond milk, and salt, then mix well together.
Oil the waffle maker, using a mini or regular one.
Add the batter to the waffle maker and ignore the light on top.
Set a timer for 8 minutes if using a mini waffle maker or 10 minutes if using a regular waffle maker.
Remove the waffle and top it as desired.
