Four-Ingredient Sweet Potato Waffles

Ingredients

  • 1 egg
  • 1 cup mashed baked peeled sweet potato
  • 2 tablespoons coconut flour
  • 1/4 cup unsweetened almond milk
  • a pinch of salt

Optional additions

  • spices such as cinnamon or garlic to taste

Preparation

  1. Bake the sweet potato until soft, peel and mash it to measure 1 cup

  2. Whisk 1 egg.

  3. Add the mashed sweet potato, coconut flour, almond milk, and salt, then mix well together.

  4. Oil the waffle maker, using a mini or regular one.

  5. Add the batter to the waffle maker and ignore the light on top.

  6. Set a timer for 8 minutes if using a mini waffle maker or 10 minutes if using a regular waffle maker.

  7. Remove the waffle and top it as desired.
