Chocolate Paleo Sweet Potato Waffle

Ingredients

  • 1 cup mashed sweet potato
  • 1/4 cup unsweetened almond milk
  • 1 egg
  • 2 tbsp coconut flour
  • 1 tsp cinnamon
  • 1 tbsp unsweetened cocoa powder
  • 1/2 scoop keto collagen, optional

Toppings

  • dark chocolate
  • bananas
  • cashew butter

Preparation

  1. Microwave 2 small sweet potatoes, peel and mash them to make 1 cup of mashed sweet potato.

  2. Combine the mashed sweet potato with almond milk, egg, coconut flour, cinnamon, cocoa powder, and optional keto collagen in a bowl and mix well.

  3. Cook the mixture in a waffle iron until done.

  4. Melt the dark chocolate and drizzle it over the waffle.

  5. Add bananas and cashew butter for dipping or topping.
