Chocolate Paleo Sweet Potato Waffle
Ingredients
- 1 cup mashed sweet potato
- 1/4 cup unsweetened almond milk
- 1 egg
- 2 tbsp coconut flour
- 1 tsp cinnamon
- 1 tbsp unsweetened cocoa powder
- 1/2 scoop keto collagen, optional
Toppings
- dark chocolate
- bananas
- cashew butter
Preparation
Microwave 2 small sweet potatoes, peel and mash them to make 1 cup of mashed sweet potato.
Combine the mashed sweet potato with almond milk, egg, coconut flour, cinnamon, cocoa powder, and optional keto collagen in a bowl and mix well.
Cook the mixture in a waffle iron until done.
Melt the dark chocolate and drizzle it over the waffle.
Add bananas and cashew butter for dipping or topping.
