Single-Serving Paleo Banana Bread with Blueberries

Ingredients

  • 1 banana
  • 1 egg
  • 2 tablespoons coconut flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon almond butter
  • 1/2 scoop of furtherfood collagen (optional)
  • blueberries on top

Preparation

  1. Preheat oven to 350°F.

  2. Mash the banana in a bowl.

  3. Add the egg, coconut flour, baking powder, cinnamon, almond milk, almond butter, and optional collagen. Mix until well combined.

  4. Fold in blueberries or place them on top as desired.

  5. Bake at 350°F for 25-28 minutes or until desired gooeyness.
