Sweet Potato Fritters
Ingredients
- 1/2 cup chickpea flour
- 1 medium sweet potato (grated)
- 1 egg
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil
Preparation
In a bowl, combine the grated sweet potato and egg.
Add the chickpea flour, paprika and salt and pepper, folding with a spoon until well combined.
Heat the olive oil in a pan over a medium to high heat, and divide the mixture to make 4-5 fritters (you can add these to the pan 2-3 at a time).
Cook for a few minutes then flip to cook the other side.
Serve up or add to your lunchbox to take on the go! (Can be enjoyed hot or cold).
