Sweet Potato Fritters

Ingredients

  • 1/2 cup chickpea flour
  • 1 medium sweet potato (grated)
  • 1 egg
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

Preparation

  1. In a bowl, combine the grated sweet potato and egg.

  2. Add the chickpea flour, paprika and salt and pepper, folding with a spoon until well combined.

  3. Heat the olive oil in a pan over a medium to high heat, and divide the mixture to make 4-5 fritters (you can add these to the pan 2-3 at a time).

  4. Cook for a few minutes then flip to cook the other side.

  5. Serve up or add to your lunchbox to take on the go! (Can be enjoyed hot or cold).
