Easy Zucchini Fritters for Kids and Snacks

Ingredients

  • 2 large zucchini, grated
  • 1/4 cup whole wheat flour
  • 1/4 grated parm
  • 1 large egg, beaten
  • Pinch salt and pepper
  • Olive oil for frying

Preparation

  1. Grate zucchini and squeeze out water in batches in a dish towel, getting out as much water as possible

  2. Place in a bowl and combine with flour, parm, egg and salt and pepper

  3. Heat olive oil in a pan over medium heat (enough oil to coat the pan)

  4. Once oil is warm, add small spoonfuls of batter onto pan and flatten with the back of your spoon

  5. Cook for a few minutes until golden brown on the bottom

  6. Flip and cook the other side another 1-2 minutes until golden as well

  7. Serve with full fat Greek yogurt

Tips

  1. Squeeze as much water as possible out of the shredded zucchini so they don’t end up soggy. Squeeze in a dish towel in batches two times.

  2. Freeze leftovers for up to 3 months
