Zucchini Egg Toasts

Ingredients

  • 1 small zucchini
  • 1 egg
  • pinch of salt
  • 1 slice whole grain bread
  • 1 tablespoon dried dill (or fresh)
  • 1 tablespoon olive oil

Preparation

  1. First you'll have to prepare the zucchini egg

  2. Grate the zucchini and mix it in a bowl together with the salt

  3. Leave it for 5-10 minutes

  4. Then, using your hands, strain the water from it

  5. Heat a pan, add some olive oil and form the grated zucchini like a pancake - not too thick

  6. Using a spoon, make a small hole in the middle and crack the egg there

  7. Add just a little bit of salt and the dried dill and cook on medium heat for several minutes until golden around the edges

  8. While cooking the egg, you can toast your bread

  9. After everything is cooked, put the zucchini egg on top of your toast

  10. Enjoy!
