Sweet Potato Waffle Sticks for 4th of July Breakfast

Ingredients

  • 1 egg
  • 1 cup mashed sweet potato
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened almond milk
  • 1 tsp cinnamon
  • 1 tsp coconut sugar (optional)
  • 1 tbsp Collagen (optional)
  • mashed raspberries
  • skyr yogurt
  • frozen blueberries

Preparation

  1. Whisk 1 egg in a bowl.

  2. Add 1 cup mashed sweet potato, 2 tablespoons coconut flour, 1/4 cup unsweetened almond milk, 1 teaspoon cinnamon, and optional 1 teaspoon coconut sugar and 1 tablespoon collagen.

  3. Cook the mixture in a waffle maker for 10 minutes, ignoring the automatic light.

  4. Mash raspberries for serving.

  5. Use skyr yogurt as a dip.

  6. Warm frozen blueberries before serving.

  7. Serve the waffle sticks with the prepared dips and maple syrup if desired.
