Sweet Potato Waffle Sticks for 4th of July Breakfast
Ingredients
- 1 egg
- 1 cup mashed sweet potato
- 2 tbsp coconut flour
- 1/4 cup unsweetened almond milk
- 1 tsp cinnamon
- 1 tsp coconut sugar (optional)
- 1 tbsp Collagen (optional)
- mashed raspberries
- skyr yogurt
- frozen blueberries
Preparation
Whisk 1 egg in a bowl.
Add 1 cup mashed sweet potato, 2 tablespoons coconut flour, 1/4 cup unsweetened almond milk, 1 teaspoon cinnamon, and optional 1 teaspoon coconut sugar and 1 tablespoon collagen.
Cook the mixture in a waffle maker for 10 minutes, ignoring the automatic light.
Mash raspberries for serving.
Use skyr yogurt as a dip.
Warm frozen blueberries before serving.
Serve the waffle sticks with the prepared dips and maple syrup if desired.
