Loaded Sweet Potato Waffle Breakfast Sandwich

Ingredients

  • 1 egg
  • 1 cup cooked mashed sweet potato (about 1 medium sweet potato)
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened almond milk
  • 1 tsp cinnamon
  • Optional scoop of protein powder

Toppings

  • 2 eggs
  • tomato
  • 1/2 avocado
  • 1 slice bacon

Preparation

  1. Whisk the egg.

  2. Mix all ingredients together well.

  3. Heat a waffle iron over medium heat.

  4. Grease the waffle iron well.

  5. Add the batter to the waffle iron.

  6. Cook for 9-10 minutes; for a mini waffle maker, cook for 6-7 minutes.

  7. Do not check too early to avoid sticking.

  8. Reheat the waffle in the toaster.

  9. Cook 2 scrambled eggs in ghee.

  10. Top with tomato, mashed avocado, and bacon.
