Loaded Sweet Potato Waffle Breakfast Sandwich
Ingredients
- 1 egg
- 1 cup cooked mashed sweet potato (about 1 medium sweet potato)
- 2 tbsp coconut flour
- 1/4 cup unsweetened almond milk
- 1 tsp cinnamon
- Optional scoop of protein powder
Toppings
- 2 eggs
- tomato
- 1/2 avocado
- 1 slice bacon
Preparation
Whisk the egg.
Mix all ingredients together well.
Heat a waffle iron over medium heat.
Grease the waffle iron well.
Add the batter to the waffle iron.
Cook for 9-10 minutes; for a mini waffle maker, cook for 6-7 minutes.
Do not check too early to avoid sticking.
Reheat the waffle in the toaster.
Cook 2 scrambled eggs in ghee.
Top with tomato, mashed avocado, and bacon.
