Homemade Blueberry Sweet Potato Muffins

Ingredients

  • 1 cup cooked sweet potato
  • 2 eggs
  • 1/4 cup + 2 tbsp coconut flour
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 1 scoop collagen (optional)
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1/2 cup blueberries

Preparation

  1. Microwave or bake the sweet potato to cook it.

  2. In a bowl, whisk the eggs.

  3. Add all other ingredients except blueberries and mix well using a blender, hand mixer, or immersion blender.

  4. Fold in the blueberries with a spatula.

  5. Spray a muffin tin or use muffin liners.

  6. Bake at 350F for 20-22 minutes.
