Homemade Blueberry Sweet Potato Muffins
Ingredients
- 1 cup cooked sweet potato
- 2 eggs
- 1/4 cup + 2 tbsp coconut flour
- 1 tbsp cinnamon
- 1 tsp vanilla
- 1 scoop collagen (optional)
- 1/4 cup coconut sugar
- 1/2 cup unsweetened almond milk
- 1 tsp baking powder
- 1/2 cup blueberries
Preparation
Microwave or bake the sweet potato to cook it.
In a bowl, whisk the eggs.
Add all other ingredients except blueberries and mix well using a blender, hand mixer, or immersion blender.
Fold in the blueberries with a spatula.
Spray a muffin tin or use muffin liners.
Bake at 350F for 20-22 minutes.
