Dreamy Maple Sweet Potato Bread Loaf

Ingredients

  • 3 eggs
  • 1.5 cups mashed, cooked, peeled sweet potato
  • 1.25 cups almond flour
  • 0.5 cup coconut flour
  • 0.5 cup maple syrup
  • 1/3 cup butter or ghee
  • 1 tablespoon cinnamon
  • 1.5 teaspoons baking powder
  • 2 tablespoons collagen (optional)

Preparation

  1. In a bowl, whisk 3 eggs.

  2. Add 1.5 cups mashed sweet potato, 1.25 cups almond flour, 0.5 cup coconut flour, 0.5 cup maple syrup, 1/3 cup melted butter or ghee, 1 tablespoon cinnamon, 1.5 teaspoons baking powder, and 2 tablespoons collagen if using.

  3. Mix together well with a hand mixer or immersion blender.

  4. Preheat oven to 350F.

  5. Line a loaf pan with parchment paper and add the batter, smoothing it out evenly.

  6. Bake for 55-60 minutes.

Tips

  1. Collagen can be omitted for extra protein if desired.

  2. Sweet potatoes can be prepped ahead of time for convenience.

  3. Top with grass-fed butter for enhanced flavor.

  4. The bread reheats well or can be enjoyed cold from the fridge.
