Dreamy Maple Sweet Potato Bread Loaf
Ingredients
- 3 eggs
- 1.5 cups mashed, cooked, peeled sweet potato
- 1.25 cups almond flour
- 0.5 cup coconut flour
- 0.5 cup maple syrup
- 1/3 cup butter or ghee
- 1 tablespoon cinnamon
- 1.5 teaspoons baking powder
- 2 tablespoons collagen (optional)
Preparation
In a bowl, whisk 3 eggs.
Add 1.5 cups mashed sweet potato, 1.25 cups almond flour, 0.5 cup coconut flour, 0.5 cup maple syrup, 1/3 cup melted butter or ghee, 1 tablespoon cinnamon, 1.5 teaspoons baking powder, and 2 tablespoons collagen if using.
Mix together well with a hand mixer or immersion blender.
Preheat oven to 350F.
Line a loaf pan with parchment paper and add the batter, smoothing it out evenly.
Bake for 55-60 minutes.
Tips
Collagen can be omitted for extra protein if desired.
Sweet potatoes can be prepped ahead of time for convenience.
Top with grass-fed butter for enhanced flavor.
The bread reheats well or can be enjoyed cold from the fridge.
