Mini Sweet Potato Toasts with Avocado and Yogurt

Ingredients

  • 1 medium sweet potato
  • 1/2 avocado
  • Plain yogurt (e.g., @culinayogurt)
  • Blueberries
  • Banana
  • Peanut butter

Preparation

  1. Microwave the sweet potato for 2 minutes to make it easier to slice (optional step).

  2. Slice the sweet potato into rounds.

  3. Preheat the broiler to 500°F (260°C).

  4. Place the sweet potato rounds on a baking sheet and broil on the bottom shelf for 10-12 minutes, until they are cooked through and slightly crispy on the edges.

  5. Remove the sweet potato rounds from the oven and let them cool slightly.

  6. Top each sweet potato round with mashed avocado, a dollop of plain yogurt, blueberries, banana slices, and a drizzle of peanut butter.

  7. Serve and enjoy!
