BBQ Tofu Bowl with Vegetables and Quinoa
Ingredients
- 1/2 block extra firm tofu
- 1 cup gogoquinoa medley 5 whole grains (mix of red, white, black quinoa, red lentils, and brown rice)
- 1 bunch organic carrots
- 1 orange bell pepper
- 1 zucchini
- 1 bunch asparagus
- olive oil
- Simply Natural Smoky BBQ sauce or similar with minimal ingredients and low sugar
- 1 avocado
- black sesame seeds
Preparation
Cook the grains following the package instructions, typically for about 20 minutes.
Wash and cut the vegetables into pieces.
Sprinkle the vegetables with salt and olive oil, place on a baking tray, and bake in the oven at 425°F for 20 minutes.
Cut the tofu into desired size pieces.
Lay the tofu flat on a baking tray, sprinkle with salt and pepper, and bake at 425°F for 6 minutes.
Flip the tofu and bake for another 6 minutes.
Toss the tofu in a bowl with BBQ sauce until fully coated.
Place the tofu back on the baking tray and bake for 10 minutes until crispy on the edges but still saucy.
Once the grains and vegetables are done, plate the dish by placing the grains at the bottom, adding the vegetables beside them, topping with the tofu, and sprinkling with black sesame seeds and avocado.
