Crispy Baked Potatoes with Seasonings and Toppings
Ingredients
- fingerling potatoes
- olive oil
- sea salt
- pepper
- garlic powder
- fresh rosemary (optional)
Toppings
- vegan sour cream
- avocado
- fresh cilantro
- garlic
- lemon juice
- sea salt
- pepper
- smoked paprika
Preparation
Coat or drizzle potatoes with olive oil.
Add sea salt, pepper, garlic powder, and optionally fresh rosemary.
Bake at 425°F for 30-45 minutes depending on the size of the potatoes.
Serve with vegan sour cream and mashed avocado mixed with fresh cilantro, garlic, lemon juice, sea salt, pepper, and smoked paprika.
