Crispy Baked Potatoes with Seasonings and Toppings

Ingredients

  • fingerling potatoes
  • olive oil
  • sea salt
  • pepper
  • garlic powder
  • fresh rosemary (optional)

Toppings

  • vegan sour cream
  • avocado
  • fresh cilantro
  • garlic
  • lemon juice
  • sea salt
  • pepper
  • smoked paprika

Preparation

  1. Coat or drizzle potatoes with olive oil.

  2. Add sea salt, pepper, garlic powder, and optionally fresh rosemary.

  3. Bake at 425°F for 30-45 minutes depending on the size of the potatoes.

  4. Serve with vegan sour cream and mashed avocado mixed with fresh cilantro, garlic, lemon juice, sea salt, pepper, and smoked paprika.
