Broiled Veggie Spinach Bowl with Avocado

Ingredients

  • spinach
  • frozen Brussel sprouts
  • sweet potato
  • 1/2 avocado
  • chipotle spice
  • vegan pesto

Preparation

  1. Heat oven to broil or 500°F.

  2. Cut sweet potato into desired shapes.

  3. Place frozen veggies and sweet potato on a pan.

  4. Cook for 10 minutes on bottom shelf.

  5. Arrange a bed of spinach.

  6. Top with broiled Brussel sprouts and sweet potato.

  7. Add 1/2 avocado sprinkled with chipotle spice.

  8. Drizzle with vegan pesto.
