Broiled Veggie Spinach Bowl with Avocado
Ingredients
- spinach
- frozen Brussel sprouts
- sweet potato
- 1/2 avocado
- chipotle spice
- vegan pesto
Preparation
Heat oven to broil or 500°F.
Cut sweet potato into desired shapes.
Place frozen veggies and sweet potato on a pan.
Cook for 10 minutes on bottom shelf.
Arrange a bed of spinach.
Top with broiled Brussel sprouts and sweet potato.
Add 1/2 avocado sprinkled with chipotle spice.
Drizzle with vegan pesto.
