Vegan Plant Protein Bowl

Ingredients

  • Quinoa
  • 1 can chickpeas
  • 1 tablespoon soy sauce
  • 1 teaspoon paprika powder
  • Tofu
  • Kale
  • Broccoli
  • Avocado
  • Cucumber
  • Tahini
  • Lemon juice
  • Salt
  • Hemp seeds

Preparation

  1. Cook quinoa according to package instructions.

  2. Rinse 1 can of chickpeas, mix with 1 tablespoon soy sauce, 1 teaspoon paprika powder, and bake at 200°C/400°F for 25-30 minutes.

  3. Prepare tofu by cubing and pan-frying until golden brown

  4. Wash, cut, and steam vegetables of choice such as broccoli and cucumber.

  5. Wash and cut kale, then massage with 1 tablespoon tahini, lemon juice, and salt.

  6. Assemble all ingredients in a bowl and drizzle with additional tahini and hemp seeds.
