Easy Healthy Flavorful Stuffed Bell Peppers

Ingredients

  • 1 can tomato sauce
  • 1 can black beans with liquid
  • 1 cup quinoa
  • 1 cup water
  • 1/2 cup drained chickpeas
  • 1 medium zucchini
  • 1/4 cup buffalo sauce of choice
  • vegan cheese

Preparation

  1. In a large pot, add all the ingredients and stir often to prevent quinoa from sticking.

  2. Cook on low heat with a lid until the liquid is absorbed, about 15-17 minutes.

  3. Place the mixture into bell peppers and top with vegan cheese.

  4. Bake at 375°F for 25 minutes. This makes about 8 servings.
