Easy Healthy Flavorful Stuffed Bell Peppers
Ingredients
- 1 can tomato sauce
- 1 can black beans with liquid
- 1 cup quinoa
- 1 cup water
- 1/2 cup drained chickpeas
- 1 medium zucchini
- 1/4 cup buffalo sauce of choice
- vegan cheese
Preparation
In a large pot, add all the ingredients and stir often to prevent quinoa from sticking.
Cook on low heat with a lid until the liquid is absorbed, about 15-17 minutes.
Place the mixture into bell peppers and top with vegan cheese.
Bake at 375°F for 25 minutes. This makes about 8 servings.
