Quinoa Stuffed Peppers

Ingredients

  • 150 g quinoa or rice (thoroughly rinsed and drained)
  • 1 can of beans (i used kidney beans)
  • 1 can or frozen sweet corn
  • 4 large bell peppers (halved, seeds removed)
  • 120 g tomato sauce
  • nutritional yeast
  • seasoning (i used: cumin, chili, garlic & curry)

Preparation

  1. Cook quinoa

  2. Preheat oven to 200c/375f

  3. Add cooked quinoa to a large mixing bowl and add remaining ingredients

  4. Mix to thoroughly combine then taste and adjust seasonings accordingly, adding salt, pepper, or more spices as desired

  5. Generously stuff halved peppers with quinoa mixture until all peppers are full

  6. Bake until peppers are soft and slightly golden brown (about 45 minutes)

  7. Serve with desired toppings ✨
