Spicy Plant-Based Beef Sesame Noodles
Ingredients
- 1 tablespoon peanut oil
- 7 oz plant-based ground beef
- 1 shallot, chopped small
- 1 tablespoon minced fresh ginger
- 2 tablespoons low sodium soy sauce (tamari or coconut aminos work too!)
- 1 teaspoon coconut sugar
- 1/4 cup roasted peanuts
- 8 oz rice noodles (pad Thai noodles)
- 1/2 - 1 bunch kale, roughly chopped (bok choy, broccoli or spinach would be tasty too)
- 4 green onions, finely minced
- Chili oil to taste
Sauce
- 1/4 cup tahini
- 4-5 tablespoons low sodium soy sauce (tamari or coconut aminos work too!)
- 3 tablespoons rice vinegar
- 4 cloves garlic, finely minced
- 2 tablespoons coconut sugar (regular sugar, brown sugar or pure maple syrup would work)
- 2 tablespoons water
Preparation
Prepare rice noodles according to package directions.
Combine all sauce ingredients in a bowl and whisk until smooth.
Heat peanut oil in a pan or wok over medium-high heat. Add ginger and shallot, and sauté for a few minutes. Add plant-based beef and cook for 2-3 minutes, breaking it up. Stir in soy sauce and coconut sugar, then cook for 5-7 minutes until browned.
Add kale and cook for 2-3 minutes. Stir in green onions and cook for 2 minutes. Add rice noodles and sauce, then toss to combine. Cook for 6-8 minutes until noodles are soft.
Serve hot with chili oil to taste, roasted peanuts, and green onions.
