Thai Basil Fried Rice with Tofu
Ingredients
- 3 cups of cooked Jasmine rice
- ~ 1 pack firm tofu, drained and cut into small cubes
- ~ 1 cup packed fresh Thai basil (I ? this herb)
- ~ 1/2 cup chopped
- ~ 3 cloves of garlic, minced
- ~ 2 teaspoons soy sauce to season tofu
- ~ few Thai chili, sliced cucumbers, lime wedges
- ~ salt to taste & oil
- Sauce (whisk all in a bowl):
- ~ 2 tablespoon soy sauce/liquid amino
- ~ 1 tablespoon 'fish' sauce
- ~ 1 teaspoon maple syrup or 1/2 teaspoon coconut sugar
Preparation
In a nonstick pan with 1 teaspoon oil, pan fry tofu until lightly brown, season with 2 teaspoons soy sauce and set aside
Using the same pan, add 3 teaspoons oil and sauté garlic until fragrant. Then, add tomato, tofu, rice & sauce. Stir continuously until each grain is coated with sauce. Season accordingly to your preference
Finally, stir in chili and Thai basil, turn off heat and mix rice until well combined. Serve warm, I like to pair it with cucumber and a squeeze of lime juice.
