Vegan Fried Rice with Tofu and Vegetables

Ingredients

  • 400g tofu
  • 1 cup brown rice, rinsed thoroughly
  • 5 cloves of garlic, chopped
  • 1 cup of spring onion, sliced
  • 2 carrots, shredded
  • 1 cup of peas
  • 1/2 cup of mushrooms

Sauce

  • 3 tbsp soy sauce
  • 1 tbsp smooth peanut butter
  • 1 tbsp maple syrup
  • 2 tsp sesame oil
  • 2 tsp hot pepper sauce

Preparation

  1. Cook the brown rice according to package instructions

  2. Press the tofu to remove excess water, then cut into cubes

  3. Fry the tofu cubes in a pan with oil until golden brown

  4. In a small bowl, whisk together the soy sauce, peanut butter, maple syrup, sesame oil, and hot pepper sauce to make the sauce

  5. In a large skillet or wok, heat oil and stir-fry the garlic, spring onion, carrots, peas, and mushrooms until tender

  6. Add the cooked rice and fried tofu to the vegetable mixture

  7. Pour the prepared sauce over the ingredients and stir well to combine

  8. Cook for an additional 2-3 minutes until everything is heated through and well mixed
