Teryaki Tempeh with Cauli Fried Rice

Ingredients

  • 125g tempeh
  • 2 tbsp teryaki sauce
  • 1 tsp sesame seeds
  • 1 small cauliflower
  • 1 courgette
  • 2 medium carrots
  • 1 red onion
  • 2 cloves of garlic
  • 1 inch piece of ginger
  • 1 red chilli
  • 2 tbsp sesame oil
  • 1-2 tbsp tamari
  • 2 sprigs of spring onion

Preparation

  1. Steam the tempeh for 10 mins

  2. Whilst the tempeh is steaming, prep all the veg; grate the cauliflower so it resembles rice

  3. Cut the carrot & courgette into little cubes & finely dice the onion, ginger, garlic & chilli

  4. Finely chop the spring onion

  5. Once tempeh has had 10 mins, take it out & put it aside

  6. Heat a wok on medium high heat & then add sesame oil

  7. Start sautéing the onions for 3 mins & then add ginger, garlic & chilli for a further 1 min

  8. Next throw in the carrot & courgette & sauté for 5 mins

  9. Then add the cauli rice

  10. Cook at stir for about 7 mins

  11. Once the rice is beginning to cook, separately, heat a frying pan on high heat & then add 1 tbsp sesame oil

  12. Throw in the tempeh & cook on each side for about 3 mins so they go brown & crispy on the edges

  13. After 3 mins each side add in the teryaki sauce & sesame seeds, give a good mix & sauté for another minute or two

  14. Finish the rice off with some tamari sauce for seasoning & then plate up: rice & then tempeh & then sprinkle with spring onion!
