Vegan Philly Cheesesteak Sandwich

Ingredients

  • 2 large portobello mushrooms
  • 1 large shallot (or yellow onion)
  • 1 tablespoon avocado oil
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1 tablespoon dark soy sauce
  • 1 tablespoon vegan Worcester sauce
  • 1 pound sliced seitan strips
  • 1 yellow bell pepper, sliced
  • 6 slices Field Roast Chao cheese

Preparation

  1. Cut portobello into thick strips and slice shallot into thin strips

  2. Saute over high heat until portobello starts to brown, about 10 minutes

  3. Add oil, dried parsley, garlic powder, soy sauce, and Worcester, then cook for 5 minutes

  4. Add seitan and bell pepper, then cook over high heat for 5 minutes while occasionally flipping

  5. Top with cheese and place pan under the broiler for 2 minutes to melt the cheese

  6. Flip and mix until cheese is incorporated

Tips

  1. The key to this dish is time and patience; avoid flipping and stirring too much to allow the portobello to char slightly

  2. It is served on sprouted whole grain burger buns for best results

  3. Seitan strips can be made from a basic homemade recipe or substituted with firm tofu
