Mushroom Pulled Pork Sandwich
Ingredients
- 2 1/2 cups shredded king oyster mushrooms
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/2 cup BBQ sauce
- Pretzel bun for serving
Cole slaw
- 1 1/2 cup cole slaw mix
- 1 tbsp lime juice
- 3 tbsp vegan mayo
- Salt and pepper to taste
Preparation
Clean mushrooms with a damp cloth.
Shred mushrooms with a fork for a pulled pork texture.
On medium-low heat, add olive oil to skillet and heat. Then add mushrooms and spices and cook for 5 minutes stirring frequently until mushrooms start to brown.
Add BBQ sauce to pan and simmer for 5 minutes.
Mix cole slaw ingredients together.
Assemble sandwich with pretzel bun, pulled pork and cole slaw.
