Mushroom Pulled Pork Sandwich

Ingredients

  • 2 1/2 cups shredded king oyster mushrooms
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup BBQ sauce
  • Pretzel bun for serving

Cole slaw

  • 1 1/2 cup cole slaw mix
  • 1 tbsp lime juice
  • 3 tbsp vegan mayo
  • Salt and pepper to taste

Preparation

  1. Clean mushrooms with a damp cloth.

  2. Shred mushrooms with a fork for a pulled pork texture.

  3. On medium-low heat, add olive oil to skillet and heat. Then add mushrooms and spices and cook for 5 minutes stirring frequently until mushrooms start to brown.

  4. Add BBQ sauce to pan and simmer for 5 minutes.

  5. Mix cole slaw ingredients together.

  6. Assemble sandwich with pretzel bun, pulled pork and cole slaw.
