Apple Cinnamon Crumble Muffins
Ingredients
- 2 1/2 cups oat flour
- 3 eggs
- 1/2 cup milk of choice
- 1/3 cup coconut sugar
- 5 tbsp butter, melted
- 2 tsp vanilla extract
- 1.5 tsp baking soda
- 1 tsp cinnamon
- 2 red apples, skinned and diced finely • Crumble - 3 tbsp coconut flour, 1/4 cup coconut sugar, 2 tbsp melted butter, 1 tsp cinnamon
- • Coconut butter for drizzling on top
Preparation
Preheat oven to 400 degrees F and fill muffin pan with 12 silicone cups
Whisk together eggs, coconut sugar, butter, milk and vanilla extract. In a separate bowl, combine flour and baking soda
Combine wet and dry ingredients. Mix in apples.
Fill each muffin cup and top with crumble
Bake for 18-20 min
Let cool, top with coconut butter & refrigerate until coconut butter hardens
