Simple Cinnamon Sugar Breakfast Muffins

Ingredients

  • 1 3/4 cup whole wheat flour
  • 2 eggs
  • 1 1/2 cup milk of choice
  • 1/4 cup coconut sugar (or brown sugar)
  • 4 tbsp butter
  • 1 tbsp baking powder
  • Pinch of salt

Filling

  • 1/2 cup brown sugar
  • 2 tbsp butter
  • 2 tsp cinnamon

Frosting

  • 1/4 cup cream cheese
  • 1 tbsp milk

Preparation

  1. Whisk together sugar and egg yolks only (gently whisk the whites and set aside for later). Then whisk in milk and butter

  2. In a separate bowl, combine flour, baking powder and salt.

  3. Add the dry ingredients to wet and mix until well combined. Fold in egg whites (until combined but not over mixed)

  4. Line 12 muffin slots with silicone liners and add 3 tbsp batter in each. Add 1 tsp cinnamon sugar filling, then top with 2 tbsp of batter and sprinkle remaining cin sugar on top.

  5. Bake at 375 degrees for 18-20 minutes

  6. Let cool, top with cream cheese frosting and enjoy
