Apple date and quinoa muffins

Ingredients

  • 100g Quinoa flour
  • 150g Spelt flour
  • 2 teaspoons baking powder
  • 125g unsalted farm butter, softened or coconut oil
  • 1/4 cup @silan.co.za date syrup
  • 1/4 cup coconut blossom sugar
  • 1 cup apple puree (homemade with organic apples if possible)
  • 2 eggs, lightly beaten or 2 chia eggs
  • 1 teaspoon vanilla extract
  • 1 tsp ground cinnamon

Preparation

  1. Preheat the oven to 180 deg C and prepare a 12 muffin baking tray.

  2. Sift the flour and baking powder into a large bowl.

  3. Mix your softened butter (or oils) with the date syrup and sugar with electric mixer until creamy. Add the apple puree, eggs, vanilla essence and cinnamon.

  4. Gently fold in your flour and baking powder (don’t overmix).

  5. Pour the batter into the prepared muffin tins (about 3/4 full) and bake for about 25 minutes (until a skewer comes out clean).
