Mini Pecan Tarts with Salted Date Caramel
Ingredients
Crust
- 1 cup pecans
- 1/2 cup rolled oats
- 1/2 cup dates, soaked and drained
- 1/4 tsp sea salt
Salted date caramel
- 1 cup dates, soaked and drained
- 1/4 cup smooth peanut butter
- 1-1/2 cup water
- 1/2 tsp sea salt
- 1 tsp cacao powder
- A handful of pecans for topping
Preparation
Place pecans and oats in a food processor and blend until broken in tiny pieces.
Add dates and salt and blend again until a sticky dough is formed. Stop and scrape sides as needed.
Press the dough into tart molds. Place in the freezer to set while preparing the caramel.
Place all caramel ingredients in a food processor. Pour half cup water initially.
Blend until smooth. Stop and scrape sides if needed.
Add more water if necessary. It should be creamy and pourable but not too runny.
Fill each pie with date caramel and decorate with a pecan nut.
