Chocolate-Date Energy Balls

Ingredients

  • 16-17 dates (pitted)
  • 80-100g rolled oats
  • 2 tbsp peanut butter (or other nut butter)
  • 2 tbsp cacao powder
  • 1-2 tbsp espresso (shot, not powder)
  • Pinch of sea salt
  • Coconut shreds

Preparation

  1. In a food processor, combine the pitted dates, rolled oats, peanut butter, cacao powder, espresso, and a pinch of sea salt.

  2. Process the mixture until it forms a sticky paste that can be easily shaped into balls.

  3. Using your hands, take small portions of the mixture and roll them into bite-sized balls.

  4. Spread the coconut shreds on a plate. Roll each energy ball in the coconut shreds to coat them.

  5. Place the coated energy balls on a tray or plate and refrigerate them for a little while to chill and firm up.

  6. Once chilled, your chocolate-date energy balls are ready to enjoy as a delicious snack or dessert!
