​Coconut Cardamom Pancakes

Ingredients

  • 1 cup whole wheat pastry flour or white whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 tbsp shredded coconut
  • 1/4 tsp salt
  • 1/4 cup apple sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 3/4 cup unsweetened almond milk

Preparation

  1. Add all dry ingredients to a small mixing bowl

  2. Add in wet ingredients and carefully mix together (do not over mix)

  3. Set aside for a few minutes as you heat up your pan or griddle

  4. If needed, grease cooking surface to prevent sticking then pour 1/4 to 1/3 cup of batter on the surface

  5. Allow pancake to cook, waiting for significant bubbles to appear on the wet surface before flipping

  6. Cook for another 2-3 minutes or until pancake is cooked through then remove and repeat with remaining batter
