Coconut Cardamom Pancakes
Ingredients
- 1 cup whole wheat pastry flour or white whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 2 tbsp shredded coconut
- 1/4 tsp salt
- 1/4 cup apple sauce
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 3/4 cup unsweetened almond milk
Preparation
Add all dry ingredients to a small mixing bowl
Add in wet ingredients and carefully mix together (do not over mix)
Set aside for a few minutes as you heat up your pan or griddle
If needed, grease cooking surface to prevent sticking then pour 1/4 to 1/3 cup of batter on the surface
Allow pancake to cook, waiting for significant bubbles to appear on the wet surface before flipping
Cook for another 2-3 minutes or until pancake is cooked through then remove and repeat with remaining batter
