Fluffy Coconut Whole Grain Pancakes
Ingredients
- 1 cup whole wheat pastry flour
- 2 tbsp shredded coconut
- 1/4 cup corn meal
- 1/4 tsp salt
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 1/4 cup unsweetened almond milk or coconut milk
Preparation
In a small bowl or cup mix together flax meal and water and let sit for five minutes
Preheat griddle and start combining dry ingredients in a bowl
Add flax egg to dry ingredients along with remaining wet ingredients
Fold ingredients together and mix briefly to combine (avoid over mixing)
Using a 1/4 cup measure, ladle batter into griddle and allow to cook for 3-4 minutes or until you see the edges of the pancake dry or bubble
Flip pancake and cook other side for an addition 3-4 minutes before removing from stove top
Repeat with remaining batter
Top with syrup, nut butters and/or fruit
