Fluffy Coconut Whole Grain Pancakes

Ingredients

  • 1 cup whole wheat pastry flour
  • 2 tbsp shredded coconut
  • 1/4 cup corn meal
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 1/4 cup unsweetened almond milk or coconut milk

Preparation

  1. In a small bowl or cup mix together flax meal and water and let sit for five minutes

  2. Preheat griddle and start combining dry ingredients in a bowl

  3. Add flax egg to dry ingredients along with remaining wet ingredients

  4. Fold ingredients together and mix briefly to combine (avoid over mixing)

  5. Using a 1/4 cup measure, ladle batter into griddle and allow to cook for 3-4 minutes or until you see the edges of the pancake dry or bubble

  6. Flip pancake and cook other side for an addition 3-4 minutes before removing from stove top

  7. Repeat with remaining batter

  8. Top with syrup, nut butters and/or fruit
