Vegan Savory Pancakes with Vegetables

Ingredients

  • 1/2 cup chickpea flour
  • 1 zucchini
  • 1 yellow squash
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • approximately 1/3 cup water

Preparation

  1. Grate the zucchini and yellow squash using a large grater.

  2. In a bowl, mix together the dry ingredients: chickpea flour, baking powder, garlic salt, paprika, black pepper, and nutritional yeast.

  3. In another bowl, combine the wet ingredients: apple cider vinegar and water.

  4. Mix the wet and dry ingredients to form a batter.

  5. Cook the batter on a hot skillet or pan until golden brown on both sides.
