Vegan Savory Pancakes with Vegetables
Ingredients
- 1/2 cup chickpea flour
- 1 zucchini
- 1 yellow squash
- 1/2 teaspoon garlic salt
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 tablespoon nutritional yeast
- 1/2 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- approximately 1/3 cup water
Preparation
Grate the zucchini and yellow squash using a large grater.
In a bowl, mix together the dry ingredients: chickpea flour, baking powder, garlic salt, paprika, black pepper, and nutritional yeast.
In another bowl, combine the wet ingredients: apple cider vinegar and water.
Mix the wet and dry ingredients to form a batter.
Cook the batter on a hot skillet or pan until golden brown on both sides.
