Creamy Avocado Pasta with Butter Beans

Ingredients

  • 5 oz gluten-free pasta of choice
  • 1/2 medium onion, chopped
  • 1 clove garlic, minced
  • 1 can butter beans, drained and rinsed
  • 2 cups de-stemmed and chopped kale
  • 1 large avocado, mashed
  • juice of 1/2 lime
  • 2 tbsp tamari
  • 1 tbsp nutritional yeast
  • 1 tbsp apple cider vinegar
  • black pepper, to taste

Preparation

  1. Cook the pasta according to packaging instructions

  2. Meanwhile, add the onion and the garlic to a non-stick frying pan and cook for 2-3 minutes

  3. Then, stir in the butter beans and kale with around 2 tbsp water and sauté until the kale wilts

  4. Drain and rinse the pasta, then transfer to a large mixing bowl together with the beans, avocado, lime juice, tamari, nutritional yeas, apple cider vinegar and black pepper

  5. Stir together well and serve
