Fusilli with an Easy Tomato-Mushroom Sauce and Garlicky Breadcrumbs

Ingredients

  • 500g pasta
  • olive oil
  • 2 cups of breadcrumbs
  • 1 small onion, finely chopped in the food processor
  • 250g mushrooms, finely chopped in the food processor
  • 5 tbsp. tomato paste
  • 2 1/2 tsp. sugar
  • 1 tbsp. dried oregano
  • salt
  • 1 tsp. chili flakes

Preparation

  1. Bring a pot with water to a boil and cook the pasta according to the package instructions •Meanwhile heat 2 tbsp. olive oil in a non-stick pan over medium heat

  2. Add the 2 minced garlic cloves and fry them in the oil for about 1 minute. Then, add the breadcrumbs to the pan and fry them for about 2-3 minutes, stirring occasionally, until they're golden

  3. Transfer the breadcrumbs to a bowl and heat another 3 tbsp. of olive oil in the pan

  4. Add the finely chopped onion and cook it for 1 minute, before adding the other 3 cloves of minced garlic and the finely chopped mushrooms

  5. Cook everything for about 2 minutes or until the mushrooms are very soft

  6. Add tomato paste, sugar, dried oregano, some salt, chili flakes and about 2 cups of hot pasta water

  7. Give everything a good stir and let the sauce thicken for about 1-2 minutes

  8. Drain the pasta and add it to the sauce with your breadcrumbs

  9. Mix everything very well and add more salt and / or olive oil if needed

  10. ENJOY
