Hearty Vegan Lentil Bolognese Dish
Ingredients
- 300 g red lentils (already cooked/packaged ones)
- 150 g carrot
- 1 garlic clove
- 1 yellow onion (70 g)
- 500 g crushed tomatoes
- 2 tbsp tomato puree
- 1 tbsp maple syrup
- 1/2 tsp salt
- 1 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp chili powder
- 1 tsp oregano
- 1 tbsp olive oil
Serving items
- Gluten-free pasta
- coconut yogurt
Preparation
Start with cutting up the onion and carrot.
Heat up a frying pan with olive oil and fry the onion until golden. Add the carrots and fry for some extra minutes.
Add the lentils, crushed tomatoes, tomato puree, garlic, maple syrup, salt, pepper, cayenne, oregano and chili powder.
Let the bolognese simmer for 10 minutes on medium heat.
Serve with the gluten-free pasta and optional some coconut yogurt on top.
