Penne with Sun-Dried Tomatoes and Olives
Ingredients
- 2 cloves garlic, minced
- a drizzle of extra virgin olive oil
- 10g capers
- 15g sun dried tomatoes
- 10 or so olives, pitted
- 75 grams tomatoes, chopped
- 80g your favourite tomato sauce
- 1 serving penne (85g)
- chili flakes
- salt + pepper
- vegan parm
Preparation
Heat olive oil in a pan. Add garlic and fry for around 1 minute.
Add olives, capers, and chopped tomatoes. Add tomato sauce and season.
Cover and simmer on medium heat for around 10 minutes, stir often.
Cook pasta in a pot of boiling, salted water until nearly al dente.
Drain and toss in pan with sauce and sun dried tomatoes. Cook for an additional minute.
Serve with chili flakes and vegan parm.
