Vegan Spaghetti with Radish Leaves
Ingredients
- 4 oz red radish leaves (from 2 bunches)
- 1 tbsp extra virgin olive oil (plus more for serving)
- 1/4 tsp red chili pepper flakes
- 2 cloves garlic, minced
- 1/2 cup water
- 1/2 tbsp dulse flakes
- 1/2 pound spaghetti (brown rice)
- 1/2 tsp salt
- 1 tsp soy sauce
Preparation
In a large pot, start boiling water for cooking spaghetti.
Cook spaghetti in salted water for 9-11 minutes or follow package instructions.
Meanwhile, heat a frying pan over medium-high heat. Add extra virgin olive oil, red chili pepper flakes, and garlic. Cook for 1-2 minutes until fragrant.
Add water and dulse flakes to the pan. Reduce heat to medium or medium-low and simmer.
In the last 2 minutes of cooking spaghetti, add radish leaves to the pan and season with salt and soy sauce.
Drain the spaghetti and transfer it to the pan. Toss quickly.
Serve with a drizzle of extra virgin olive oil.
