Vegan Broccoli Avocado Pasta

Ingredients

  • 10 oz gluten-free pasta
  • 3 cups broccoli florets
  • 2 large avocados
  • 1 onion
  • 2 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 2 cloves garlic
  • 3 tbsp nutritional yeast
  • 3 tbsp pasta cooking water

Preparation

  1. Cook the pasta according to instructions on packaging and steam the broccoli for 10 minutes.

  2. Add the avocado, onion, apple cider vinegar, salt, garlic, nutritional yeast, 3 tbsp pasta cooking water and broccoli to a blender or food processor.

  3. Blend until smooth.

  4. Mix with the pasta and enjoy.
