Vegan Pesto Pasta with Cherry Tomatoes

Ingredients

Pesto

  • 1 dl sunflower seeds
  • Handful of spinach
  • Handful of basil
  • 1 tbsp nutritional yeast
  • 1 tbsp vegan parmesan
  • 1 tbsp lemon juice
  • 1 dl olive oil
  • Salt and pepper to taste

Pasta and toppings

  • Pasta of choice
  • Cherry tomatoes
  • Basil
  • Vegan feta

Preparation

  1. Mix all pesto ingredients together in a blender.

  2. Cook the pasta according to package instructions.

  3. Mix the pesto into the cooked pasta.

  4. Top with cherry tomatoes, fresh basil, and vegan feta.

  5. Serve immediately.

Tips

  1. Store leftover pesto in a jar in the fridge.
