Vegan Pesto Pasta with Cherry Tomatoes
Ingredients
Pesto
- 1 dl sunflower seeds
- Handful of spinach
- Handful of basil
- 1 tbsp nutritional yeast
- 1 tbsp vegan parmesan
- 1 tbsp lemon juice
- 1 dl olive oil
- Salt and pepper to taste
Pasta and toppings
- Pasta of choice
- Cherry tomatoes
- Basil
- Vegan feta
Preparation
Mix all pesto ingredients together in a blender.
Cook the pasta according to package instructions.
Mix the pesto into the cooked pasta.
Top with cherry tomatoes, fresh basil, and vegan feta.
Serve immediately.
Tips
Store leftover pesto in a jar in the fridge.
