Four-Ingredient Creamy Hummus Pasta
Ingredients
- 100g pasta of choice
- 1/2 cup hummus
- 1/2 cup pasta water
- 1 cup cherry tomatoes, chopped in half
- 1 tsp salt
To serve
- Basil
- Pepper
- Vegan Parmesan
Preparation
Cook the pasta according to packet instructions, drain and set aside, reserving 1/2 cup of the pasta water.
Return the pot to the stove over medium-low heat, add the hummus, salt, and 1/2 cup of pasta water, and whisk until smooth.
Add the cherry tomatoes and cook for 2-3 minutes.
Add the pasta and toss until evenly coated in sauce.
Transfer to serving bowls and enjoy.

Serve with fresh basil, cracked pepper, and vegan Parmesan.
