Creamy Vegan Hummus Pasta
Ingredients
- 16 oz penne pasta
- 1 cup hummus
- 4 cups fresh baby spinach
- 12 oz jar of marinated artichokes
- 2 cups halved grape tomatoes
- 1 tbsp fresh lemon juice
- 1/2 cup pitted kalamata olives
- 1 tsp salt
- 1 tsp garlic powder
- pepper to taste
Preparation
Cut the tomatoes in half.
Cook the pasta according to package instructions, drain, and set aside.
In the large pasta pot, add the artichokes with their liquid, spinach, olives, hummus, tomatoes, salt, pepper, and garlic powder.
Stir well until combined.
Serve and enjoy.
Notes
This recipe is oil-free and can be made gluten-free by using gluten-free pasta.
