Healthy Shepherd's Pie with Veggies and Cauliflower Mash
Ingredients
- 3 large potatoes
- 1/2 cauliflower
- 2-3 tablespoons Earth Balance or butter
- 2-3 tablespoons mayo
- salt and pepper
- 1 pack ground beef or turkey
- oil
- 1 small onion
- 1/2 cup carrots
- 3/4 cup zucchini
- 3/4 cup peppers
- 2 garlic cloves
- 2 tablespoons tomato paste
- 2 tablespoons coconut aminos
- 1/2 cup vegetable broth
- 1 teaspoon salt
- pepper
- chili flakes
- thyme
Preparation
Boil 3 large potatoes cubed and 1/2 cauliflower for 20 minutes until potatoes are soft, then drain and mash with 2-3 tablespoons Earth Balance or butter, 2-3 tablespoons mayo, salt and pepper, adding more as needed.
Cook 1 pack of ground beef or turkey, drain excess fat, and remove from heat.
Sauté 1 small chopped onion in oil for 3 minutes.
Add 1/2 cup chopped carrots and cook for another 3 minutes.
Add 3/4 cup chopped zucchini, 3/4 cup chopped peppers, and 2 minced garlic cloves, then cook until soft, about 5 minutes.
Add the cooked beef, 2 tablespoons tomato paste, 2 tablespoons coconut aminos, 1/2 cup vegetable broth, and spices (1 teaspoon salt, pepper, chili flakes, thyme), stir and simmer for 10 minutes.
Preheat oven to 350°F.
Spread the meat and vegetable mixture in a large baking dish, top with the mashed potatoes and cauliflower mixture, and bake for 20 minutes, then broil for 3 minutes.
This is a perfect make-ahead dish for hosting or meal prep lunches, and it's super yummy and full of nutrients.
