Spaghetti Squash with Meat Sauce
Ingredients
- spaghetti squash
- olive oil
- salt
- pepper
- ground beef or turkey
- 1 onion, diced
- 2 carrots, diced
- garlic
- 1 green pepper, diced
- 28 oz can crushed tomatoes
- 3/4 cup broth or water
- 2 tablespoons tomato paste
- handful fresh basil or 1 tablespoon dried basil
- 1 teaspoon chili flakes
Preparation
Preheat oven to 400 degrees.
Cut squash in half lengthwise.
Rub with olive oil, salt and pepper.
Place cut side down on a baking sheet and poke a few holes on the outside with a fork.
Bake for 40 minutes.
Over medium-high heat in a large pot, cook ground beef or turkey until brown, then remove from heat and drain.
Add a splash of olive oil, 1 diced onion and 2 diced carrots with a sprinkle of salt.
After 5 minutes, add garlic and diced green pepper and cook for 30 seconds.
Add 28 oz can of crushed tomatoes, 3/4 cup broth or water, 2 tablespoons tomato paste, handful of fresh basil chopped or 1 tablespoon dried basil, 1 teaspoon chili flakes, salt, pepper and the cooked meat.
Simmer for 25 minutes or pressure cook for 10 minutes with 10 minutes natural release.
Scrape the squash strands with a fork and top with the sauce.
