Spaghetti Squash with Meat Sauce

Ingredients

  • spaghetti squash
  • olive oil
  • salt
  • pepper
  • ground beef or turkey
  • 1 onion, diced
  • 2 carrots, diced
  • garlic
  • 1 green pepper, diced
  • 28 oz can crushed tomatoes
  • 3/4 cup broth or water
  • 2 tablespoons tomato paste
  • handful fresh basil or 1 tablespoon dried basil
  • 1 teaspoon chili flakes

Preparation

  1. Preheat oven to 400 degrees.

  2. Cut squash in half lengthwise.

  3. Rub with olive oil, salt and pepper.

  4. Place cut side down on a baking sheet and poke a few holes on the outside with a fork.

  5. Bake for 40 minutes.

  6. Over medium-high heat in a large pot, cook ground beef or turkey until brown, then remove from heat and drain.

  7. Add a splash of olive oil, 1 diced onion and 2 diced carrots with a sprinkle of salt.

  8. After 5 minutes, add garlic and diced green pepper and cook for 30 seconds.

  9. Add 28 oz can of crushed tomatoes, 3/4 cup broth or water, 2 tablespoons tomato paste, handful of fresh basil chopped or 1 tablespoon dried basil, 1 teaspoon chili flakes, salt, pepper and the cooked meat.

  10. Simmer for 25 minutes or pressure cook for 10 minutes with 10 minutes natural release.

  11. Scrape the squash strands with a fork and top with the sauce.
