Deconstructed Chicken Pot Pie in Instant Pot

Ingredients

  • 1/2 onion or 1 small onion
  • 3 potatoes
  • 2 carrots
  • 2 stalks celery
  • 2 garlic cloves
  • olive oil
  • 1 cup chicken broth
  • 1 tsp thyme
  • salt
  • pepper
  • chili flakes (optional)
  • 2 chicken breasts
  • 1/2 cup frozen peas
  • 1/2 cup almond milk
  • 1 tbsp arrowroot flour
  • 1 tbsp ghee or vegan butter

Preparation

  1. Dice 1/2 an onion or 1 small one, chop 3 potatoes, 2 carrots and 2 stalks of celery, mince 2 garlic cloves

  2. Hit sauté on your Instant Pot and add olive oil, once hot add veggies and cook for 4 minutes

  3. Hit cancel and add 1 cup chicken broth plus 1 tsp thyme, salt, pepper and chili flakes (optional); stir and top with 2 raw chicken breasts cut in half

  4. Pressure cook for 5 minutes plus naturally release for 10 minutes

  5. Remove chicken and dice

  6. Stir in 1/2 cup frozen peas followed by 1/2 cup almond milk

  7. Hit sauté again and let it come to a simmer

  8. Stir in 1 tbsp arrowroot flour mixed with 1 tbsp melted ghee or vegan butter, simmer for 5 minutes until it thickens, hit cancel and return chicken to the pot

  9. Serve with your choice of biscuits or bread
