Deconstructed Chicken Pot Pie in Instant Pot
Ingredients
- 1/2 onion or 1 small onion
- 3 potatoes
- 2 carrots
- 2 stalks celery
- 2 garlic cloves
- olive oil
- 1 cup chicken broth
- 1 tsp thyme
- salt
- pepper
- chili flakes (optional)
- 2 chicken breasts
- 1/2 cup frozen peas
- 1/2 cup almond milk
- 1 tbsp arrowroot flour
- 1 tbsp ghee or vegan butter
Preparation
Dice 1/2 an onion or 1 small one, chop 3 potatoes, 2 carrots and 2 stalks of celery, mince 2 garlic cloves
Hit sauté on your Instant Pot and add olive oil, once hot add veggies and cook for 4 minutes
Hit cancel and add 1 cup chicken broth plus 1 tsp thyme, salt, pepper and chili flakes (optional); stir and top with 2 raw chicken breasts cut in half
Pressure cook for 5 minutes plus naturally release for 10 minutes
Remove chicken and dice
Stir in 1/2 cup frozen peas followed by 1/2 cup almond milk
Hit sauté again and let it come to a simmer
Stir in 1 tbsp arrowroot flour mixed with 1 tbsp melted ghee or vegan butter, simmer for 5 minutes until it thickens, hit cancel and return chicken to the pot
Serve with your choice of biscuits or bread
